Ingredients:
- 2 cups HAPPIEE Plant-based Chickiee Popcorn
- 1 capsicum, chopped into chunks
- ½ cucumber, deseeded and chopped into chunks
- 4 tbsp ketchup
- 4 tbsp brown sugar
- 3 tbsp vinegar
- 2 tbsp water
Instructions:
- Heat oil to 180°C and deep fry HAPPIEE Plant-based Chickiee Popcorn for 2.5 minutes or until golden brown.
- Stir fry capsicums for 3 minutes.
- Add sliced cucumbers and continue to stir fry for 3 minutes.
- Add ketchup, water, sugar, and vinegar to pan and stir until sugar is dissolved.
- Add chickiee popcorn back to pan and stir fry until sauce thickens.
- Ready to serve.
