Ingredients:

  • 2 cups HAPPIEE Plant-based Chickiee Popcorn
  • 1 capsicum, chopped into chunks
  • ½ cucumber, deseeded and chopped into chunks
  • 4 tbsp ketchup
  • 4 tbsp brown sugar
  • 3 tbsp vinegar
  • 2 tbsp water


Instructions:

  1. Heat oil to 180°C and deep fry HAPPIEE Plant-based Chickiee Popcorn for 2.5 minutes or until golden brown.
  2. Stir fry capsicums for 3 minutes.
  3. Add sliced cucumbers and continue to stir fry for 3 minutes.
  4. Add ketchup, water, sugar, and vinegar to pan and stir until sugar is dissolved.
  5. Add chickiee popcorn back to pan and stir fry until sauce thickens.
  6. Ready to serve.
