Ingredients:

  • 5 pieces HAPPIEE! Plant-based Chickiee Patties
  • For marinade
    • 2 tsp turmeric powder
    • 2 tsp grated ginger
    • 1 tsp grated lemongrass
    • 1 tsp chilli powder
    • 1 tsp soya sauce
  • For peanut sauce
    • 2 tbsp peanut butter
    • ½ cup ground peanuts
    • ½ cup dried chilli, soaked overnight
    • 4 cloves garlic
    • 4 shallots
    • 2 candlenuts
    • 1 tbsp sugar/gula melaka
    • Water (sufficient)
    • Salt to taste
    • Oil (sufficient)

Instructions:

For Chickiee Patties

  1. Thaw and cut into strips. Combine ingredients for marinade and marinade HAPPIEE! Chickiee patty strips in the marinade for 1h. Remove from marinade and skewer with bamboo skewers. Air fry/bake until golden brown.

For peanut sauce

  1. Blend dried chilli, garlic, shallots and candlenut to form a rough paste. Heat oil in a pan and fry paste until fragrant.
  2. Add peanut butter and fry until well combined.
  3. Add sugar and ground peanuts and simmer.
  4. Add water if the paste is too thick.
  5. Simmer until ground peanuts are softened.
  6. Add salt to taste and serve.
